Typically, it is a mildly acid coffee, light bodied but flavourful and aromatic. Peruvian are thought of as a good blending coffee due to its nice but understated character. The Cuzco region, particularly the Urubamba Valley, also grows respected wet-processed coffee. The best level is AAA.
Peruvian coffee beans can be a darker roast but do not need to be. Light or dark roast is dependent on the coffee roaster after the coffee has been grown. Peruvian coffee is suited to both lighter and darker roasting.
The acidity of a coffee is because of the cultivating area and in part impactged by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are lower in acidity, such as Sumatra, are cultivated at lower altitudes.
Both coffees exhibit a simple & balanced taste. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee.
Arabica is the largest coffee crop:
- 70 percent of which is Typica (Typica is an original Arabica type that is a tall & leggy low yield shrub but produces high qualities, generally very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the remainder being of other types.
About 75 percent of the coffee farming area is at an elevation range of 1000 to 1800 m.
