Generally, it is a mildly acid cup, light-bodied but tasteful & aromatic. Peru coffee beans are known as a good blending coffee because of its nice but understated character. The Cuzco area, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The highest level is AAA.
Peruvian coffee may be a darker roast but do not need to be. Light or dark roast depends on the coffee bean roasting after the coffee has been produced. Peruvian coffee is well matched to both light and dark roasting.
The acidity of a coffee is as a result of the cultivating location & in part impactged by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are lower in acidity, such as Sumatran, are farmed at lower altitudes.
Both coffee beans have a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian beans.
Arabica is the dominant coffee cultured:
- 70% of which is Typica (Typica is an original Arabica type that is a tall and leggy small yield shrub but provides high qualities, generally quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever discovered); and
- the remainder being of other types.
About 75 percent of the coffee cultivation area is at an altitude range of 1,000–1800 metres.
