Typically, it is a mildly acid cup, light-bodied but flavourful & aromatic. Peruvian beans are known as a good blending coffee because of its pleasant but understated attributes. The Cuzco location, especially the Urubamba Valley, also grows renound wet-processed coffee. The highest grade is AAA.
Peru beans may be a dark roast but does not need to be. lighter or darker roast depends on the coffee roaster after the coffee has been grown. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is partly due to the growing area & in part influenced by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are lower in acidity, such as Sumatran, are cultivated at lower altitudes.
Both coffee beans exhibit a simple & balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee beans.
Arabica is the dominant coffee crop:
- 70% of which is Typica (Typica is an original Arabica type that is a tall & leggy low yield shrub but produces great qualities, generally very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever found); and
- the rest are other types.
About 75% of the coffee cultivating area lies at an elevation range of 1,000–1,800 m.
