Typically, a mildly acid flavour, light-bodied but flavourful and aromatic. Peruvian are thought of as a good blending coffee owing to its pleasant but understated character. The Cuzco location, especially the Urubamba Valley, also cultivates renound wet-processed coffee. The best level is AAA.
Peru coffee beans can be a dark roast but does not need to be. Light or dark roast is dependent on the coffee bean roaster after the coffee has been grown. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is in part due to the cultivating location and in part influenced by the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are lower in acidity, such as Sumatra, are grown at lower elevations.
Both coffees show a simple & balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee.
Arabica is the largest coffee farmed:
- 70% of which is Typica (Typica is an original Arabica variety that is a tall and leggy small yield shrub but provides high qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, considered to be the 1st naturally occurring mutation ever discovered); and
- the rest being of other types.
About 75 percent of the coffee farming area lies at an elevation range of 1000–1800 metres.
