Generally, it is a mildly acid taste, light-bodied but flavourful and aromatic. Peruvian beans are known as a good blender due to its nice but understated character. The Cuzco area, particularly the Urubamba Valley, also cultivates respected wet-processed coffee. The highest grade is AAA.
Peru coffee may be a darker roast but do not need to be. Light or dark roast depends on the bean roasting after the coffee has been grown. Peruvian coffee is well matched to both light and dark roasting.
The acidity of a coffee is in part due to the cultivating location and partly influenced by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are reduced in acidity, such as Sumatra, are produced at lower altitudes.
Both coffee beans show a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee beans.
Arabica is the predominant coffee farmed:
- 70% of which is Typica (Typica is an original Arabica variety that is a tall and leggy small yield tree but produces excellent qualities, generally very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the rest being of other varieties.
About 75 percent of the coffee farming area is at an elevation range of 1000 to 1800 metres.
