Generally, a mildly acid coffee, light bodied but tasteful & aromatic. Peru are considered a good blending coffee due to its nice but understated attributes. The Cuzco location, particularly the Urubamba Valley, also cultivates renound wet-processed coffee. The best level is AAA.
Peru beans may be a dark roast but do not need to be. Light or dark roast is dependent on the coffee roasting after the coffee has been produced. Peruvian coffee is suited to both light and dark roasting.
The acidity of a coffee is in part due to the farming region and partly impactged by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are lower in acidity, such as Sumatra, are grown at lower altitudes.
Both coffees have a simple & balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee.
Arabica is the predominant coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica variety that is a tall and leggy small yield shrub but produces high qualities, generally quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the remainder being of other varieties.
About 75% of the coffee farming area is at an elevation range of 1,000–1,800 m.
