Typically, it is a mildly acid cup, light bodied but tasteful and aromatic. Peru beans are thought of as a good blender due to its nice but understated attributes. The Cuzco region, particularly the Urubamba Valley, also grows renound wet-processed coffee. The best level is AAA.
Peruvian coffee may be a darker roast but does not need to be. Light or dark roast is dependent on the coffee bean roaster after the coffee has been grown. Peruvian coffee is suited to both light & dark roasting.
The acidity of a coffee is as a result of the cultivating region & in part influenced from the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are less in acidity, such as Sumatra, are cultivated at lower altitudes.
Both coffees have a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee beans.
Arabica is the largest coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica type which is a tall & leggy low yield tree but produces great qualities, generally quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, considered to be the 1st naturally occurring mutation ever discovered); and
- the remainder are other varieties.
About 75% of the coffee farming area lies at an elevation range of 1,000–1,800 metres.
