Typically, it is a mildly acid cup, light-bodied but tasteful and aromatic. Peruvian coffee beans are known as a good blending coffee because of its nice but understated attributes. The Cuzco region, particularly the Urubamba Valley, also produces renound wet-processed coffee. The best grade is AAA.
Peru coffee can be a dark roast but do not need to be. Light or dark roast depends on the coffee bean roaster after the coffee has been grown. Peruvian coffee is suited to both light & dark roasting.
The acidity of a coffee is because of the growing region and in part influenced from the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are reduced in acidity, such as Sumatra, are grown at lower altitudes.
Both coffees show a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee beans.
Arabica is the dominant coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica strain which is a tall & leggy low yield shrub but produces excellent qualities, typically very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the rest being of other types.
About 75% of the coffee growing area is at an altitude range of 1,000 to 1800 m.
