Generally, it is a mildly acid cup, light-bodied but flavourful & aromatic. Peruvian coffee are thought of as a good blender owing to its pleasant but understated attributes. The Cuzco location, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The best level is AAA.
Peruvian coffee may be a dark roast but does not need to be. Light or dark roast depends on the bean roaster after the coffee has been grown. Peruvian coffee is suited to both lighter and darker roasting.
The acidity of a coffee is as a result of the cultivating location & in part influenced from the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are reduced in acidity, such as Sumatra, are farmed at lower altitudes.
Both coffees have a simple yet balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian beans.
Arabica is the largest coffee cultured:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall & leggy low yield shrub but produces great qualities, usually quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever found); and
- the remainder are other varieties.
About 75% of the coffee cultivating area lies at an altitude range of 1000 to 1800 metres.
