Typically, a mildly acid taste, light bodied but tasteful and aromatic. Peruvian coffee are known as a good blending coffee because of its pleasant but understated characteristics. The Cuzco location, especially the Urubamba Valley, also cultivates renound wet-processed coffee. The highest grade is AAA.
Peruvian coffee beans may be a dark roast but do not need to be. Light or dark roast is dependent on the coffee bean roaster after the coffee has been grown. Peruvian coffee is well matched to both lighter and darker roasting.
The acidity of a coffee is partly due to the growing location and in part influenced by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are reduced in acidity, such as Sumatra, are produced at lower elevations.
Both coffees exhibit a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & lacks the aromatic quality of a Colombian coffee.
Arabica is the largest coffee grown:
- 70% of which is Typica (Typica is an original Arabica strain that is a tall & leggy low yield shrub but produces high qualities, generally very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever found); and
- the remainder being of other types.
About 75% of the coffee farming area is at an altitude range of 1000 to 1800 m.
