Generally, a mildly acid coffee, light-bodied but tasteful and aromatic. Peru coffee are known as a good blending coffee due to its pleasant but understated attributes. The Cuzco region, especially the Urubamba Valley, also grows respected wet-processed coffee. The best grade is AAA.
Peru coffee may be a dark roast but does not need to be. Light or dark roast depends on the coffee roasting after the coffee has been produced. Peruvian coffee is suited to both light & dark roasting.
The acidity of a coffee is partly due to the cultivating region and partly impactged from the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are lower in acidity, such as Sumatran, are grown at lower altitudes.
Both coffees show a simple and balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian beans.
Arabica is the predominant coffee grown:
- 70% of which is Typica (Typica is an original Arabica variety which is a tall and leggy small yield tree but produces high qualities, generally very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally found in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the rest being of other varieties.
About 75% of the coffee cultivation area lies at an elevation range of 1000 to 1,800 m.
