Generally, it is a mildly acid flavour, light bodied but tasteful & aromatic. Peru coffee beans are thought of as a good blender owing to its pleasant but understated attributes. The Cuzco area, particularly the Urubamba Valley, also cultivates respected wet-processed coffee. The best level is AAA.
Peruvian coffee may be a dark roast but do not need to be. lighter or darker roast depends on the coffee bean roasting after the coffee has been grown. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is as a result of the growing location and partly influenced from the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are less in acidity, such as Sumatran, are cultivated at lower elevations.
Both coffee beans have a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian beans.
Arabica is the predominant coffee crop:
- 70 percent of which is Typica (Typica is an original Arabica strain which is a tall and leggy small yield shrub but produces great qualities, usually quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever discovered); and
- the rest being of other types.
About 75 percent of the coffee cultivation area lies at an altitude range of 1,000–1,800 metres.
