Typically, it is a mildly acid cup, light bodied but tasteful & aromatic. Peru are thought of as a good blending coffee due to its pleasant but understated character. The Cuzco location, especially the Urubamba Valley, also produces respected wet-processed coffee. The highest level is AAA.
Peru coffee beans can be a darker roast but do not need to be. lighter or darker roast depends on the coffee bean roasting after the coffee has been farmed. Peruvian coffee is suited to both lighter and darker roasting.
The acidity of a coffee is in part due to the growing location & in part influenced from the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are lower in acidity, such as Sumatran, are farmed at lower altitudes.
Both coffee beans show a simple and balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee beans.
Arabica is the predominant coffee crop:
- 70 percent of which is Typica (Typica is an original Arabica type which is a tall & leggy low yield plant but provides great qualities, generally very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally found in Brazil in 1937, considered to be the first naturally occurring mutation ever found); and
- the rest being of other types.
About 75% of the coffee growing area lies at an elevation range of 1,000–1,800 m.
