Typically, it is a mildly acid flavour, light-bodied but flavourful and aromatic. Peruvian are thought of as a good blender due to its nice but understated characteristics. The Cuzco area, especially the Urubamba Valley, also produces respected wet-processed coffee. The highest level is AAA.
Peru coffee may be a dark roast but does not need to be. Light or dark roast is dependent on the coffee roaster after the coffee has been farmed. Peruvian coffee is well matched to both lighter and darker roasting.
The acidity of a coffee is because of the cultivating area and in part impactged from the method a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are lower in acidity, such as Sumatran, are grown at lower elevations.
Both coffee beans exhibit a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee beans.
Arabica is the primary coffee grown:
- 70% of which is Typica (Typica is an original Arabica type that is a tall & leggy small yield tree but produces great qualities, typically very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally found in Brazil in 1937, thought to be the 1st naturally occurring mutation ever discovered); and
- the rest are other types.
About 75% of the coffee growing area lies at an elevation range of 1000–1800 metres.
