Typically, it is a mildly acid cup, light-bodied but flavourful and aromatic. Peruvian coffee beans are known as a good blending coffee due to its pleasant but understated attributes. The Cuzco area, particularly the Urubamba Valley, also cultivates respected wet-processed coffee. The best grade is AAA.
Peru coffee beans may be a darker roast but do not need to be. lighter or darker roast depends on the coffee bean roasting after the coffee has been grown. Peruvian coffee is well matched to both lighter & darker roasting.
The acidity of a coffee is partly due to the cultivating location & partly influenced by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this type. The coffees that are lower in acidity, such as Sumatra, are produced at lower elevations.
Both coffees show a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee.
Arabica is the primary coffee farmed:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall and leggy low yield plant but produces high qualities, generally very sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee strain that was originally discovered in Brazil in 1937, thought to be the first naturally occurring mutation ever found); and
- the rest are other types.
About 75% of the coffee farming area is at an altitude range of 1000 to 1,800 m.
