Generally, it is a mildly acid cup, light bodied but flavourful and aromatic. Peru coffee are thought of as a good blender because of its nice but understated character. The Cuzco location, particularly the Urubamba Valley, also cultivates renound wet-processed coffee. The best grade is AAA.
Peru beans may be a darker roast but do not need to be. lighter or darker roast depends on the bean roasting after the coffee has been grown. Peruvian coffee is suited to both light & dark roasting.
The acidity of a coffee is in part due to the growing region & partly impactged by the way a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are less in acidity, such as Sumatra, are grown at lower altitudes.
Both beans have a simple & balanced taste. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian beans.
Arabica is the largest coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica type which is a tall and leggy small yield shrub but produces great qualities, usually quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally found in Brazil in 1937, considered to be the first naturally occurring mutation ever found); and
- the remainder being of other types.
About 75 percent of the coffee cultivating area is at an altitude range of 1000–1,800 metres.
