Typically, a mildly acid taste, light-bodied but flavourful & aromatic. Peruvian are known as a good blender due to its pleasant but understated character. The Cuzco region, especially the Urubamba Valley, also cultivates respected wet-processed coffee. The best grade is AAA.
Peruvian coffee beans can be a darker roast but does not need to be. lighter or darker roast is dependent on the bean roasting after the coffee has been produced. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is as a result of the growing region and partly impactged from the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this type. The coffees that are reduced in acidity, such as Sumatra, are grown at lower elevations.
Both coffees have a simple yet balanced flavour. Peruvian coffee is not as thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and lacks the aromatic quality of a Colombian coffee beans.
Arabica is the predominant coffee grown:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall and leggy small yield tree but produces excellent qualities, generally quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee variety that was originally discovered in Brazil in 1937, thought to be the 1st naturally occurring mutation ever found); and
- the remainder being of other types.
About 75 percent of the coffee farming area lies at an elevation range of 1000 to 1,800 m.
