Usually, it is a mildly acid flavour, light-bodied but tasteful & aromatic. Peru coffee are considered a good blender due to its nice but understated attributes. The Cuzco location, particularly the Urubamba Valley, also cultivates renound wet-processed coffee. The highest grade is AAA.
Peruvian beans can be a dark roast but does not need to be. Light or dark roast depends on the bean roasting after the coffee has been farmed. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is partly due to the cultivating area and partly influenced by the method a bean is processed & roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are less in acidity, such as Sumatra, are produced at lower altitudes.
Both coffees exhibit a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee.
Arabica is the primary coffee cultured:
- 70 percent of which is Typica (Typica is an original Arabica variety which is a tall and leggy low yield tree but produces great qualities, generally quite sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, considered to be the 1st naturally occurring mutation ever discovered); and
- the remainder are other types.
About 75 percent of the coffee growing area is at an elevation range of 1000–1800 metres.
