Typically, it is a mildly acid taste, light bodied but tasteful & aromatic. Peruvian coffee are known as a good blending coffee due to its nice but understated attributes. The Cuzco area, especially the Urubamba Valley, also cultivates renound wet-processed coffee. The highest level is AAA.
Peruvian beans may be a dark roast but does not need to be. Light or dark roast is dependent on the coffee roaster after the coffee has been produced. Peruvian coffee is suited to both lighter & darker roasting.
The acidity of a coffee is partly due to the growing area and partly influenced by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans are all in this category. The coffees that are lower in acidity, such as Sumatran, are farmed at lower elevations.
Both coffee beans show a simple yet balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity & does not have the aromatic quality of a Colombian coffee beans.
Arabica is the predominant coffee cultured:
- 70% of which is Typica (Typica is an original Arabica strain which is a tall and leggy small yield plant but produces excellent qualities, usually quite sweet & clean);
- 20 percent is Caturra (Caturra is a natural mutation of the Bourbon coffee tree that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever found); and
- the rest being of other varieties.
About 75% of the coffee growing area lies at an altitude range of 1000 to 1800 metres.
