Usually, it is a mildly acid cup, light bodied but flavourful & aromatic. Peruvian coffee are considered a good blender owing to its nice but understated character. The Cuzco region, particularly the Urubamba Valley, also grows respected wet-processed coffee. The highest level is AAA.
Peru beans may be a dark roast but do not need to be. lighter or darker roast is dependent on the coffee roaster after the coffee has been produced. Peruvian coffee is well matched to both light & dark roasting.
The acidity of a coffee is as a result of the growing location and in part impactged by the way a bean is processed and roasted. Brazilian, Peruvian, Kenyan and Ethiopian beans falls into this category. The coffees that are lower in acidity, such as Sumatran, are produced at lower altitudes.
Both coffee beans exhibit a simple and balanced flavour. Peruvian coffee is less thick as Colombian, instead with a medium mouthfeel. Peruvian coffee is also medium in acidity and does not have the aromatic quality of a Colombian coffee beans.
Arabica is the predominant coffee farmed:
- 70 percent of which is Typica (Typica is an original Arabica type which is a tall and leggy small yield tree but produces excellent qualities, usually very sweet & clean);
- 20% is Caturra (Caturra is a natural mutation of the Bourbon coffee plant that was originally discovered in Brazil in 1937, considered to be the first naturally occurring mutation ever discovered); and
- the remainder are other varieties.
About 75 percent of the coffee farming area is at an altitude range of 1000 to 1,800 m.
