In a small saucepan,boil water and panela. Panela is a product that is produced from sugarcane, it is sweet & brown, is sold in blocks or grated & the flavour is similar to that of brown sugar. Decrease heat to low and simmer for 30 min, stir occationally to melt panela.

In a tiny French press, place the ground coffee beans. Pour Aguapanela (Aguapanela or Agua de Panela translates to “panela water”) over coffee until it reaches the top of the French press.

Depending on the sub-variety & degree of roasting, top quality Colombian Arabica coffee contains 30-50 milligrams per each espresso serving and up to 200 mg in an 235ml (~8-ounce) cup.

    • The hulling process

Colombian coffee beans are dried benith the sun over a few days or until the moisture content gets to around 10 percent. This aids in the bean’s drying and preps it for hulling.
