In a small saucepan,boil water and panela. Panela is a product that is produced with sugarcane, it is sweet & brown, is marketed in blocks or grated and the flavour is like that of brown sugar. Reduce heat to low and cook for 30 minutes, occasionally stirring to melt panela.

The caffeine concentration of Colombian coffee is similar to that of other coffee varieties. The caffeine content of a dark roast coffee is slightly greater than that of a light roast coffee. The difference is minor & may go unnoticed. Depending on the sub-variety & degree of roasting, top quality Colombian Arabica coffee has 30-50 milligrams per each espresso serving and up to 200 mg in an 235ml (~8-ounce) cup.

    • The hulling proceedure
