In a small saucepan,boil water and panela. Panela is a product that is produced from sugarcane, it is sweet and brown, is sold in blocks or grated and the flavour is like that of brown sugar. Reduce heat to low & cook for 30 minutes, stir occationally to melt panela.

In a small French press, place the ground beans. Pour Aguapanela (Aguapanela or Agua de Panela translates to “panela water”) over coffee until it gets to the brim of the French press.

Brew for four min, stirring only once. Push down the French press and pour the coffee straight away.

Colombian coffee is best as a dark roast.  This because of the fuller, floral taste, but light roasts made from Colombian beans are equally delicious. While keeping the bean’s flavour, cocoa & caramel flavours are brought to the forefront. The flavours & aromas of medium to dark roasts are stronger.

Colombian coffee’s farming conditions & processes make it considered to be the best by many people, particually because of its distinct flavour. Farmers of the Arabica beans produce flavourful coffee with outstanding quality at high altitudes. They are then naturally processed on small farms by hand. The higher altitude produces a nicer flavoured coffee bean. Because of its favourable meteorological characteristics, Colombia coffee is a rich, somewhat fruity, & chocolaty flavour.

The caffeine content of Colombian coffee is comparable to that of other coffees. The caffeine content of a dark roast coffee is a little bit higher than that of a light roast coffee. The difference is minor & may go unnoticed. Depending on the sub-variety and amount of roasting, high quality Colombian Arabica coffee has 30-50 milligrams per single espresso serving and up to 200 milligrams in an 235ml (~8-ounce) cup.

    • The hulling proceedure

Colombian coffee beans are dried benith the sun for a few days or until the water amount reaches around 10%. This aids in the bean’s drying & preps it for hulling. Sumatran coffee stays far less time in the sunshine. Sumatran coffee is hulled with significantly higher water content, sometimes as high as 20%.

To remove the hulls, special wet hulling equipment is needed. The wet hulling equipment also allows the coffee beans to ferment, giving them a distinct flavor that you will not find anywhere.

This makes it one of the greatest coffees for acid sensitivity.

Sumatran coffee has a distinctive flavour. It has earthy undertones that set it apart from the competition. You will detect hints of bell pepper, mushrooms, and even herbs when drinking Sumatran coffee. The way the coffee is processed and the land in which it is grown contribute to this flavour.
