Colombian Coffee provides a mild acidity & a robust caramel sweetness, sometimes with a nutty undertone, similar to good quality Peruvian coffees. They have the most well known coffee taste in North America, that of sweet and medium-bodied.

It is possible to make strong Colombian coffee compared to other coffee types. The strength of the coffee is determined by the processing, roasting & brewing process. In a little pot,boil water and panela. Panela is a product that is made from sugarcane, it is sweet & brown, is marketed in blocks or grated & the flavour is similar to that of brown sugar. Decrease heat to low & cook for 30 minutes, stir occationally to melt panela.

In a tiny French press, put the ground coffee. Pour Aguapanela (Aguapanela or Agua de Panela translates to “panela water”) over coffee until it reaches the top of the French press.

Brew for four min, stirring once during the time. Push down the French press & pour the coffee right away.

The caffeine concentration of Colombian coffee is similar to that of other coffees. The caffeine concentration of a dark roast coffee is slightly greater than that of a light roast coffee. The difference is minor & may not be noticable. Depending on the sub-variety & degree of roasting, high-quality Colombian Arabica coffee has 30-50 milligrams per single espresso serving and up to 200 mg in an 235ml (~8-ounce) cup.

    • The hulling proceedure

Colombian coffee beans are dried under the sun for a few days or until the water content gets to about 10%. This aids in the bean’s drying & prepares it for hulling.
