In a small pot, bring water & panela to a boil. Panela is a product that is made with sugarcane, it is sweet & brown, is marketed in blocks or grated and the taste is similar to that of brown sugar. Reduce heat to low and cook for 30 min, stir occationally to melt panela.

In a little French press, put the ground coffee beans. Pour Aguapanela (Aguapanela or Agua de Panela translates to “panela water”) over coffee until it gets to the top of the French press.

Brew for four minutes, stirring once during the time. Plunge the French press & pour the coffee right away.

Colombian coffee is best as a dark roast.  This due to the fuller, floral taste, but light roasts made from Colombian beans are just as flavourful. While keeping the bean’s taste, cocoa & caramel flavours are brought to the forefront. The flavours and aromas of medium to dark roasts are stronger.

Colombian coffee’s growing conditions & processes make it thought to be the best by many people, particually because of its distinct taste. Farmers of the Arabica beans produce flavourful coffee with excellent quality at high altitudes. They are then prepared natually on little farms by hand. The high altitude produces a nicer flavoured bean. Due to its favourable climatic characteristics, Colombia coffee is a rich, somewhat fruity, & chocolaty taste.

The caffeine concentration of Colombian coffee is comparable to that of other coffee varieties. The caffeine concentration of a dark roast coffee is slightly more than that of a light roast coffee. The difference is small & may not be noticable. Depending on the sub-variety and degree of roasting, high-quality Colombian Arabica coffee has 30-50 milligrams per each espresso serving and up to 200 mg in an 235ml (~8-ounce) cup.

    • The hulling process

Colombian coffee beans are dried under the sun for a few days or until the water content gets to about ten%. This aids in the bean’s drying & prepares it for hulling.
