In a little saucepan, bring water and panela to a boil. Panela is a product that is produced from sugarcane, it is sweet & brown, is sold in blocks or grated and the flavour is similar to that of brown sugar. Decrease heat to low & cook for 30 min, occasionally stirring to melt panela.

Depending on the sub-variety and amount of roasting, high-quality Colombian Arabica coffee has 30-50 mg per each espresso serving & up to 200 mg in an 235ml (~8-ounce) cup.

- The hulling process
