In a small saucepan, bring water and panela to a boil. Panela is a product that is produced from sugarcane, it is sweet and brown, is sold in blocks or grated & the taste is like that of brown sugar. Decrease heat to low & simmer for 30 min, occasionally stirring to melt panela.

The caffeine concentration of Colombian coffee is similar to that of other coffee beans. The caffeine concentration of a dark roast coffee is slightly greater than that of a light roast coffee. The difference is small & may not be noticable. Depending on the sub-variety and amount of roasting, top quality Colombian Arabica coffee contains 30-50 mg per each espresso serving & up to 200 mg in an 235ml (~8-ounce) cup.

    • The hulling proceedure

Colombian coffee beans are dried under the sun over a few days or until the water content reaches around 10%. This aids in the bean’s drying & prepares it for hulling.
