In a small saucepan,boil water and panela. Panela is a product that is produced from sugarcane, it is sweet & brown, is marketed in blocks or grated & the flavour is similar to that of brown sugar. Reduce heat to low & cook for 30 minutes, occasionally stirring to melt panela.

The caffeine concentration of Colombian coffee is similar to that of other coffee varieties. The caffeine content of a dark roast coffee is slightly higher than that of a light roast coffee. The difference is small and may go unnoticed. Depending on the sub-variety & amount of roasting, top quality Colombian Arabica coffee has 30-50 milligrams per single espresso serving & up to 200 mg in an 235ml (~8-ounce) cup.

    • The hulling process

Colombian coffee beans are dried benith the sun for a few days or until the moisture content reaches around 10%. This helps in the bean’s drying & preps it for hulling. Sumatran coffee stays far less time in the sunshine. Sumatran coffee is hulled with substantially higher moisture amount, at times as high as 20 percent.

To remove the hulls, special wet hulling equipment is needed. The wet hulling equipment also allows the coffee beans to ferment, giving them a distinct flavor that you will not find anywhere.

Colombian coffee has a well-balanced flavour and moderate acidity. This coffee has a bit of a bite to it, but it is not overly harsh. Because of its smooth flavour, several coffee connoisseurs consider Colombian coffee to be among the greatest in the world. Sumatran coffee has a much lower acidity level. This makes it one of the greatest coffees for acid sensitivity.

Sumatran coffee has a distinctive flavour. It has earthy undertones that set it apart from the competition. You will detect hints of bell pepper, mushrooms, and even herbs when drinking Sumatran coffee. The way the coffee is processed and the land in which it is grown contribute to this flavour.
