Colombian Coffee has a mild acidity and a robust caramel sweetness, often with a nut undertone, similar to high quality Peruvian coffee. They have the most identifiable coffee taste in North America, being sweet and medium-bodied.

In a small saucepan,boil water and panela. Panela is a product that is produced from sugarcane, it is sweet and brown, is sold in blocks or grated & the taste is similar to that of brown sugar. Reduce heat to low and cook for 30 minutes, stir occationally to melt panela.

The caffeine concentration of Colombian coffee is comparable to that of other coffee types. The caffeine concentration of a dark roast coffee is slightly higher than that of a light roast coffee. The difference is minor & may go unnoticed. Depending on the sub-variety & degree of roasting, high quality Colombian Arabica coffee has 30-50 mg per single espresso serving & up to 200 milligrams in an 235ml (~8-ounce) cup.

    • The hulling process

Colombian coffee beans are dried benith the sun over a few days or until the moisture amount gets to around 10 percent. This aids in the bean’s drying & preps it for hulling. Sumatran coffee spends far less time in the sun. Sumatran coffee is hulled with a lot higher moisture amount, at times as high as 20 percent.

To remove the hulls, special wet hulling equipment is needed. The wet hulling equipment also allows the coffee beans to ferment, giving them a distinct flavor that you will not find anywhere.
