In a small pot,boil water and panela. Panela is a product that is produced with sugarcane, it is sweet & brown, is sold in blocks or grated & the flavour is similar to that of brown sugar. Decrease heat to low & cook for 30 min, occasionally stirring to melt panela.

In a little French press, place the ground coffee beans. Pour Aguapanela (Aguapanela or Agua de Panela translates to “panela water”) over coffee until it gets to the brim of the French press.

Brew for four min, stirring only once. Push down the French press & pour the coffee right away.

Colombian coffee beans are most suited for a dark roast.  This because of the fuller, floral flavour, but light roasts made from Colombian beans are just as delicious. While retaining the bean’s taste, cocoa and caramel flavours are brought to the forefront. The flavours and aromas of medium to dark roasts are stronger.

Colombian coffee’s producing conditions & processes make it considered to be the best by a lot of people, particually because of its distinct flavour. Farmers of the Arabica beans produce flavourful coffee with excellent quality at higher altitudes. They are then prepared natually on small farms by hand. The higher altitude makes for a nicer flavoured coffee bean. Because of its favourable climatic attributes, Colombia coffee beans are a rich, somewhat fruity, & chocolaty flavour.

The caffeine concentration of Colombian coffee is similar to that of other coffee varieties. The caffeine concentration of a dark roast coffee is a little bit higher than that of a light roast coffee. The difference is small & may not be noticable. Depending on the sub-variety & amount of roasting, top quality Colombian Arabica coffee has 30-50 milligrams per each espresso serving and up to 200 mg in an 235ml (~8-ounce) cup.

    • The hulling process

Colombian coffee beans are dried under the sun for a few days or until the moisture amount gets to around 10%. This aids in the bean’s drying & prepares it for hulling. Sumatran coffee stays far less time in the sun. Sumatran coffee is hulled with substantially higher water amount, sometimes as much as 20%.

This makes it one of the greatest coffees for acid sensitivity.

Sumatran coffee has a distinctive flavour. It has earthy undertones that set it apart from the competition. You will detect hints of bell pepper, mushrooms, and even herbs when drinking Sumatran coffee. The way the coffee is processed and the land in which it is grown contribute to this flavour.
