In a little saucepan,boil water and panela. Panela is a product that is made from sugarcane, it is sweet and brown, is marketed in blocks or grated and the taste is like that of brown sugar. Decrease heat to low & cook for 30 minutes, occasionally stirring to melt panela.

The caffeine content of Colombian coffee is comparable to that of other coffee varieties. The caffeine content of a dark roast coffee is a little bit higher than that of a light roast coffee. The difference is small and may not be noticable. Depending on the sub-variety and degree of roasting, high-quality Colombian Arabica coffee has 30-50 mg per single espresso serving & up to 200 mg in an 235ml (~8-ounce) cup.

    • The hulling proceedure

Colombian coffee beans are dried under the sun over a few days or until the moisture content gets to around 10%. This helps in the bean’s drying & preps it for hulling. Sumatran coffee stays a lot less time in the sun. Sumatran coffee is hulled with substantially higher moisture amount, at times as high as 20 percent.

To remove the hulls, special wet hulling equipment is needed. The wet hulling equipment also allows the coffee beans to ferment, giving them a distinct flavor that you will not find anywhere.

Colombian coffee has a well-balanced flavour and moderate acidity. This coffee has a bit of a bite to it, but it is not overly harsh. Because of its smooth flavour, several coffee connoisseurs consider Colombian coffee to be among the greatest in the world. Sumatran coffee has a much lower acidity level. This makes it one of the greatest coffees for acid sensitivity.

Sumatran coffee has a distinctive flavour. It has earthy undertones that set it apart from the competition. You will detect hints of bell pepper, mushrooms, and even herbs when drinking Sumatran coffee. The way the coffee is processed and the land in which it is grown contribute to this flavour.
