In a small saucepan, bring water and panela to a boil. Panela is a product that is made from sugarcane, it is sweet & brown, is sold in blocks or grated and the taste is like that of brown sugar. Reduce heat to low and cook for 30 min, occasionally stirring to melt panela.

The caffeine content of Colombian coffee is comparable to that of other coffee beans. The caffeine concentration of a dark roast coffee is slightly more than that of a light roast coffee. Depending on the sub-variety & amount of roasting, high-quality Colombian Arabica coffee contains 30-50 mg per single espresso serving and up to 200 milligrams in an 235ml (~8-ounce) cup.

    • The hulling process

This makes it one of the greatest coffees for acid sensitivity.
