Colombian Coffee has a mild acidity and a robust caramel sweetness, occationally with a nutty undertone, similar to high quality Peruvian coffee. Colombian coffee beans have the most distinct coffee flavour in North America, being sweet & medium bodied.

It is possible to produce stronger Colombian coffee in comparison to non-Colombian coffee types. The strength of the coffee will depend on the processing, roasting and brewing methods. In a small pot, bring water and panela to a boil. Panela is a product that is produced with sugarcane, it is sweet and brown, is marketed in blocks or grated and the flavour is like that of brown sugar. Decrease heat to low & cook for 30 minutes, occasionally stirring to melt panela.

In a little French press, place the ground coffee beans. Pour Aguapanela (Aguapanela or Agua de Panela translates to “panela water”) over coffee until it reaches the top of the French press.

The caffeine concentration of Colombian coffee is similar to that of other coffee beans. The caffeine content of a dark roast coffee is a little bit more than that of a light roast coffee. The difference is small & may go unnoticed. Depending on the sub-variety and amount of roasting, top quality Colombian Arabica coffee contains 30-50 milligrams per single espresso serving and up to 200 mg in an 235ml (~8-ounce) cup.

    • The hulling process

Colombian coffee beans are dried benith the sun over a few days or until the water amount reaches about ten percent. This helps in the bean’s drying and prepares it for hulling. Sumatran coffee spends a lot less time in the sunshine. Sumatran coffee is hulled with substantially greater water content, sometimes as much as 20 percent.

To remove the hulls, special wet hulling equipment is needed. The wet hulling equipment also allows the coffee beans to ferment, giving them a distinct flavor that you will not find anywhere.

Colombian coffee has a well-balanced flavour and moderate acidity. This coffee has a bit of a bite to it, but it is not overly harsh. Because of its smooth flavour, several coffee connoisseurs consider Colombian coffee to be among the greatest in the world. Sumatran coffee has a much lower acidity level. This makes it one of the greatest coffees for acid sensitivity.

Sumatran coffee has a distinctive flavour. It has earthy undertones that set it apart from the competition. You will detect hints of bell pepper, mushrooms, and even herbs when drinking Sumatran coffee. The way the coffee is processed and the land in which it is grown contribute to this flavour.
