In a small pot,boil water and panela. Panela is a product that is produced with sugarcane, it is sweet & brown, is sold in blocks or grated & the taste is similar to that of brown sugar. Decrease heat to low and cook for 30 min, occasionally stirring to melt panela.

In a tiny French press, place the ground coffee beans. Pour Aguapanela (Aguapanela or Agua de Panela translates to “panela water”) over coffee until it reaches the top of the French press.

Brew for 4 min, stirring only once. Plunge the French press and pour the coffee straight away.

The caffeine concentration of Colombian coffee is comparable to that of other coffee types. The caffeine concentration of a dark roast coffee is slightly greater than that of a light roast coffee. The difference is small & may not be noticable. Depending on the sub-variety & degree of roasting, high quality Colombian Arabica coffee has 30-50 milligrams per each espresso serving & up to 200 mg in an 235ml (~8-ounce) cup.

    • The hulling proceedure

Colombian coffee beans are dried benith the sun for a few days or until the moisture amount reaches about ten percent. This helps in the bean’s drying and prepares it for hulling. Sumatran coffee spends a lot less time in the sun. Sumatran coffee is hulled with significantly greater moisture amount, at times as much as 20 percent.

To remove the hulls, special wet hulling equipment is needed. The wet hulling equipment also allows the coffee beans to ferment, giving them a distinct flavor that you will not find anywhere.

This makes it one of the greatest coffees for acid sensitivity.

Sumatran coffee has a distinctive flavour. It has earthy undertones that set it apart from the competition. You will detect hints of bell pepper, mushrooms, and even herbs when drinking Sumatran coffee. The way the coffee is processed and the land in which it is grown contribute to this flavour.
