In a small pot, bring water & panela to a boil. Panela is a product that is made with sugarcane, it is sweet and brown, is marketed in blocks or grated & the taste is like that of brown sugar. Decrease heat to low & cook for 30 minutes, occasionally stirring to melt panela.

In a little French press, put the ground coffee. Pour Aguapanela (Aguapanela or Agua de Panela translates to “panela water”) over coffee until it gets to the top of the French press.

Brew for four minutes, stirring only once. Push down the French press and pour the coffee straight away.

Colombian coffee beans are most suited for a dark roast.  This as a result of the fuller, floral taste, but light roasts made from Colombian beans are just as tasty. The caffeine concentration of Colombian coffee is comparable to that of other coffee varieties. The caffeine content of a dark roast coffee is a little bit higher than that of a light roast coffee. Depending on the sub-variety & amount of roasting, high quality Colombian Arabica coffee contains 30-50 mg per single espresso serving & up to 200 mg in an 235ml (~8-ounce) cup.

    • The hulling process

Colombian coffee beans are dried under the sun for a few days or until the moisture amount reaches around 10%. This aids in the bean’s drying and preps it for hulling. Sumatran coffee stays far less time in the sun. Sumatran coffee is hulled with a lot higher water amount, at times as much as 20 percent.
