Colombian Coffee provides a mild acidity and a robust caramel sweetness, occationally with a nutty undertone, similar to high quality Peruvian coffees. They have the most distinct coffee taste in North America, being sweet & medium-bodied.
It is possible to produce stronger Colombian coffee compared to non-Colombian coffee. The strength of the coffee is determined by the processing, roasting & brewing methods. Thus, Colombian coffee is just stronger if it is prepared to be strong. Increased amounts of lower-quality beans produce a bitter brew, but Colombian coffee keeps its flavour integrity even when pushed via more rigorous and vigorous brewing processes.

In a small saucepan, bring water & panela to a boil. Panela is a product that is produced with sugarcane, it is sweet and brown, is marketed in blocks or grated and the flavour is like that of brown sugar. Reduce heat to low and cook for 30 minutes, occasionally stirring to melt panela.

- The hulling process
Colombian coffee beans are dried under the sun over a few days or until the moisture amount reaches around ten percent. This helps in the bean’s drying and preps it for hulling. Sumatran coffee spends far less time in the sun. Sumatran coffee is hulled with substantially greater water content, sometimes as much as 20 percent.

- Acidity and flavour
Colombian coffee has a well-balanced flavour and moderate acidity. This coffee has a bit of a bite to it, but it is not overly harsh. Because of its smooth flavour, several coffee connoisseurs consider Colombian coffee to be among the greatest in the world. Sumatran coffee has a much lower acidity level. This makes it one of the greatest coffees for acid sensitivity.
Sumatran coffee has a distinctive flavour. It has earthy undertones that set it apart from the competition. You will detect hints of bell pepper, mushrooms, and even herbs when drinking Sumatran coffee. The way the coffee is processed and the land in which it is grown contribute to this flavour.
