In a small saucepan,boil water and panela. Panela is a product that is produced from sugarcane, it is sweet and brown, is sold in blocks or grated & the flavour is like that of brown sugar. Reduce heat to low & cook for 30 min, occasionally stirring to melt panela.

In a tiny French press, put the ground beans. Pour Aguapanela (Aguapanela or Agua de Panela translates to “panela water”) over coffee until it reaches the brim of the French press.

Brew for four minutes, stirring only once. Push down the French press and pour the coffee straight away.

Colombian coffee beans are best as a dark roast.  This due to the fuller, floral flavour, however light roasts made from Colombian beans are just as delicious. While keeping the bean’s flavour, cocoa & caramel flavours are brought to the forefront. The flavours and smells of medium to dark roasts are stronger.

Colombian coffee’s cultivating conditions & processes make it thought to be the best by many people, especially because of its distinct flavour. Farmers of the Arabica beans produce flavourful coffee with great quality at high altitudes. They are then naturally prepared on small farms by hand. The higher elevation makes for a nicer flavoured bean. Because of its favourable climatic characteristics, Colombian coffee is a rich, somewhat fruity, and chocolaty flavour.

The caffeine content of Colombian coffee is comparable to that of other coffee varieties. The caffeine concentration of a dark roast coffee is a little bit greater than that of a light roast coffee. The difference is small and may not be noticable. Depending on the sub-variety & amount of roasting, high-quality Colombian Arabica coffee has 30-50 mg per single espresso serving & up to 200 mg in an 235ml (~8-ounce) cup.

    • The hulling proceedure

Colombian coffee beans are dried under the sun for a few days or until the moisture content gets to about ten percent. This helps in the bean’s drying & prepares it for hulling. Sumatran coffee stays far less time in the sunshine. Sumatran coffee is hulled with substantially greater water amount, at times as much as twenty percent.

To remove the hulls, special wet hulling equipment is needed. The wet hulling equipment also allows the coffee beans to ferment, giving them a distinct flavor that you will not find anywhere.

    • Acidity and flavour

Colombian coffee has a well-balanced flavour and moderate acidity. This coffee has a bit of a bite to it, but it is not overly harsh. Because of its smooth flavour, several coffee connoisseurs consider Colombian coffee to be among the greatest in the world. Sumatran coffee has a much lower acidity level. This makes it one of the greatest coffees for acid sensitivity.

Sumatran coffee has a distinctive flavour. It has earthy undertones that set it apart from the competition. You will detect hints of bell pepper, mushrooms, and even herbs when drinking Sumatran coffee. The way the coffee is processed and the land in which it is grown contribute to this flavour.
