Yes, Arabica beans are typcially more acidic & less bitter than Robusta beans.  The acid are exhibited as fruity flavours. Low acidity types may exhibit a less fruity taste.

Professional roasters carefully control & change all aspects of the roast process to make different tastes in their coffee and ensure consistency between batches of beans. Taste differs based on if it is a light roast, medium roast or dark roast coffee and a range of other conditions that are regulated during the roast.

Darker roasts will have a much richer, bolder taste than lighter roasted coffee. Light roasted coffee usually retain more flavours than darker roasts. This can mean that the distinct tastes of the beans from the various areas can often be more pronounced in lighter roasted coffee. This is key to consider when purchasing coffee.
