Yes, Arabica beans tend to be more acidic and less bitter than Robusta beans.  The acid are exhibited as fruity flavours. Low acidity types may have a reduced fruity flavour.

The roast process also plays a major part in the flavour characteristics of the beans. Combining different varieties & roasting is an art and science. Specialist roasters meticulously control and change every aspect of the roast process to develop different flavours in their beans and ensure consistency across batches of roasts. Flavour differs based on if it is a light roast, medium roast or dark roast coffee and a number of other factors that are controlled during the process.

Darker roasts will have a much richer, bolder taste than lighter roasted coffee. Light roasted beans usually retain more tastes than darker roasts. This can mean that the marked tastes of the beans from the various regions can often be more pronounced in light roasted coffee. This is paramount to think about when purchasing beans.
