Yes, Arabica beans are typcially more acidic & less bitter than Robusta beans.  The acid are tasted as fruity flavours. Low acidity varieties may have a reduced fruity taste.

The roasting proceedure also influences a major part in the flavour profile of the coffee. Combining different types and roasting is both an art and science. Specialist roasters meticulously control & adjust all aspects of the roasting process to make different tastes in their beans and ensure consistency across batches of roasts. Flavour differs based on if it is a light roast, medium roast or dark roast coffee and a range of other aspects that are controlled during the process.

Darker roasts will have a much richer, bolder taste than lightly roasted beans. Light roast coffee will retain more flavours than darker roasts. This means that the distinct flavours of the beans from the various locations are be more distinct in lighter roasted beans. This is important to consider when purchasing coffee.
