The roasting proceedure also plays a major part in the taste characteristics of the coffee. Combining different varieties & roasting is both an art and science. Specialist roasters carefully control and adjust all aspects of the roasting proceedure to develop different tastes in their beans and maintain consistency across batches of roasts. Taste differs depending on if it is a light roast, medium roast or dark roast coffee and a range of additional conditions that are regulated during the proceedure.

Darker roasts will show a much richer, bolder taste than lighter roasted beans. Light roast beans usually keep more flavours than darker roasts. This can mean that the marked flavours of the beans from the different locations are be more pronounced in light roasted coffee. This is important to think about when buying coffee beans.
