The roast proceedure also influences a significant part in the flavour characteristics of the coffee. Mixing different varieties & roasting is both an art & science. Professional roasters meticulously control and change all aspects of the roast proceedure to make different flavours in their beans & ensure consistency between batches of roasts. Flavour changes depending on if it is a light roast, medium roast or dark roast coffee and a range of additional aspects that are controlled during the proceedure.

Darker roasts will have a much richer, bolder taste than lighter roasted coffee. Light roasted beans typcially retain more flavours than dark roasts. This can mean that the distinct flavours of the beans from the various regions are be more pronounced in light roasted coffee. This is important to think about when purchasing beans.
