Yes, Arabica beans are usually more acidic and less bitter than Robusta beans.  The acid come through as fruity flavours. Low acidity varieties may show a less fruity taste.

The roast proceedure also plays a major role in the taste characteristics of the beans. Mixing different varieties & roasting is both an art and science. Flavour differs depending on if it is a light roast, medium roast or dark roast coffee & a number of additional aspects that are regulated during the proceedure.

Darker roasts will show a much richer, bolder flavour than lightly roasted coffee. Light roasted beans typcially retain more flavours than darker roasts. This means that the distinct flavours of the coffee from the different areas can often be more distinct in lighter roasted beans. This is important to think about when purchasing beans.
