The roast proceedure also plays a major role in the taste characteristics of the beans. Mixing different varieties & roasting is both an art and science. Professional roasters meticulously control and adjust all aspects of the roast proceedure to make different tastes in their coffee & ensure consistency across batches of coffee. Flavour differs depending on if it is a light roast, medium roast or dark roast coffee & a number of additional aspects that are regulated during the proceedure.

Darker roasts will show a much richer, bolder flavour than lightly roasted coffee. Light roasted beans typcially retain more flavours than darker roasts. This means that the distinct flavours of the coffee from the different areas can often be more distinct in lighter roasted beans. This is important to think about when purchasing beans.
