Flavour changes based on if it is a light roast, medium roast or dark roast coffee & a number of additional factors that are controlled during the roasting.

Darker roasts will have a much richer, bolder flavour than lightly roasted beans. Light roasted coffee beans typcially retain more flavours than dark roasts. This can mean that the distinct tastes of the coffee from the different areas are be more pronounced in light roasted coffee. This is paramount to think about when buying coffee.
