Flavour changes based on if it is a light roast, medium roast or dark roast coffee and a range of other things that are controlled during the roast.

Darker roasts will exhibit a much richer, bolder taste than lightly roasted beans. Light roast beans typcially keep more tastes than darker roasts. This means that the marked tastes of the coffee from the various regions can often be more distinct in light roasted beans. This is important to think about when purchasing beans.
